Pepperoni and Cheese
When setting up 850º we wanted to make sure that we only used the best ingredients possible, with a very strong preference for using Ontario's amazing collection of farms and local producers. Two of the most important ingredients on our menu are: Our Pepperoni, hand-crafted over a 3 week process using only premium cuts of meat from farms in S/W Ontario. The spicing and grinding of the meat is the first process… The meat is left for a number of days to absorb the flavours of the spices. The pepperoni is then stuffed by hand, hung on sticks to dry and ferment over several days. After allowing to dry, it is naturally cold-smoked for a further few days.
Our Fior di latte cheese is made daily using cow’s milk that comes from Belhaven, Ontario using a recipe and process that has been passed down over four generations. The Buffalo cheese that we use comes from the only Buffalo farm in Ontario. Still only four years old, the farm in Sterling Ontario manages to produce the some of the most amazing tasting Buffalo cheese!
